Now this probably comes under the heading “wierd things Rebecca likes to eat” but i’m proud of my often strange food cravings. This is what i would call a pick- me- up- snack. And its good for so many reasons: its jam- packed with nutrients and natural fats, its energy- boosting, its sugar- less, its vegan, its filling, its delicious! It lasts in the fridge for a week and you can take as little (or as much) as you desire.

(vegan, can be gluten- free if you use suitable oats, serves about 12)

Oaty, Coconutty, Fruity Wonder Snack:

  • 100g raw Peanuts
  • 60g Scottish Oats
  • 50g chopped Dates
  • 100g Sultanas
  • 60g flaked Coconut
  • 2 ripe Bananas
  • 2 teaspoons of Cinnamon
  • 2 tablespoons of Sunflower Oil
  1. Preheat your oven to 160c and line a loaf tin with baking parchment
  2. Lay the peanuts, coconut and oats on a baking tray and roast for 15 minutes, remove and allow to cool
  3. Throw everything into a blender and blitz for a couple of seconds, until a paste is starting to form but there are still nice chunks
  4. Tip into your loaf tin and press down firmly, cover in cling film and refrigerate overnight
  5. Its then ready to portion to your liking
