No. I’m not eating raw wheat pasta. I now own a julienne peeler, a £2 julienne peeler. So much cheaper than a mandolin or spiraliser. Use this baby to peel any old courgette and in two minutes, bam, delicious, RAW spaghetti. Marinated briefly in lemon juice and olive oil and coated, lovingly, in our foraged, wild garlic & almond pistou. A wee sprinkle of nutritional yeast and there you have the perfect, 3 minutes, vegan, raw lunch, dinner, snack.

(Serves 1, Raw, Vegan, Gluten- Free)

  • 1/2 a Courgette
  • juice of 1/3 Lemon
  • teaspoon of Olive Oil
  • 1 tablespoon of Pistou
  • 1 tablespoon of Nutritional Yeast
  1. Peel you courgette and use your hands to seperate the strands into a small bowl
  2. Cover in the oil and lemon and let sit for at least 5 minutes
  3. Stir in your pistou and sprinkle the yeast on top.
