I do not recommend baking when hungover. Worst still, attempting to convert any recipe from imperial to metric. Even worse, trying to reduce said recipe in order to get the yield to 1/3 of the original. It was a whole pan of coffee kind of morning. However, perseverance paid off and the smell emanating from the kitchen was enough to make everything ok again. More than ok in fact. Orange soaked Date Muffin kind of ok. These vegan, gluten- free guys are perfect bundles of naturally sweet, nut studded, seed flecked heaven. The kind of muffin that you know, whilst still eating the first, that you are definitely going to have another one, straight away. Did i mention that they’re also sugar free? flour free? and actually really good for you? Protein, natural fats, omega 3, fibre, these guys are bursting with them.


(Makes 6, bearing in mind the above, please excuse the un-precise measurements below. They worked for me!)

  • 45g Ground Almonds
  • 15g Rolled oats
  • 1/2 teaspoon of Baking Powder
  • (just less than) 1/4 Bicarbonate of Soda
  • (just less than) 1/4 teaspoon of Salt
  • 1 tablespoon of Chia Seeds + 3 tablespoons of Water
  • 1 tablespoon of Agave Nectar
  • 1/2 tablespoon of Coconut Oil
  • 16 Dates, pitted
  • juice and zest of 1/2 an Orange
  • 1/2 teaspoon of Vanilla extract
  • 1/4 (coffee) cup of Mixed Seeds, including Flax
  • 1/2 (coffee) cup of Mixed Nuts
  1. Heat your oven to 180c, Pop 6 Muffin cases into a tin
  2. Chop the dates into small pieces and soak in the orange juice and zest for a minimum of one hour (preferably overnight)
  3. Mix the chia seeds with the water in a cup and set aside for 15 minutes (it will turn into a gel)
  4. Mix the almond meal with the oats, bicarb, baking powder and salt in a bowl
  5. In another cup, whisk the coconut oil, agave and vanilla, stir in the soaked dates with the juice, whisk until combined
  6. Pour the dates mix into the oat mix and stir well
  7. Fold in the seeds and nuts and distribute
  8. Spoon about 2 tablespoons of mix into each case
  9. Bake for 25- 35 minutes, until the tops are nice and golden
  10. Transfer to a rack and allow to cool completely better eating
