What better Easter treat to receive than RAW homemade Chocolate bars. I played around with the original recipe and i’m much happier with the results. The main difference came from the use of moulds which enabled me to omit the dates and resulted in small rectangular chunks of pure cacao amazingness. I went with two flavours: Orange Zest & Bee Pollen and Sea Salted Nut. The bars not only look incredibly luxurious but they are full of pure unadulterated, nutritious goodness. So easy to make, such simple ingredients- the effects after you’ve taken the smallest mouthful are just the most incredible exhilaration you can experience. Need anymore convincing? I won’t bother, just go and try them…


(Makes 2 bars, RAW, Vegan, Gluten- free, depending on your choice of flavours)

  • 85g Cacao Butter
  • 80g Raw Cacao Powder
  • 2 tablespoons of Agave Nectar
  • seeds of 1 Vanilla Pod
  • scant pinch of Sea Salt
  • zest of 1 Orange + 1 tablespoon of Bee Pollen
  • handful of mixed Nuts + 1/4 teaspoon of Sea Salt
  1. Line your chosen mould with baking parchment and dust with a little cacao powder
  2. Melt the cacao butter very gently in a glass bowl over a very shallow pan of boiling water
  3. Once melted add the powder, agave, vanilla and salt and stir until smooth
  4. Divide into two (working quickly as the mixture will set fast) stir the orange zest into one, pour into the mould then sprinkle the bee pollen on top
  5. Lay half your nuts and salt in the bottom of your other mould and pour the remaining chocolate on top, finish with the remaining nuts and salt
  6. Allow to cool completely before chilling in the fridge overnight
