As its Friday, i thought i’d give you a little something to get you through those last few hours of work. Its our RAW Chocolate Cheesecake but flavoured with Orange zest and my homemade Chai mix. Mmmmmm.

(Serves 12, Vegan, Gluten- free, RAW)

Chai Spice Mix:

  • 4 pods Green Cardamon
  • 6 Cloves
  • 4 Pink Peppercorns
  • 1 Star Anise
  • tablespoon of Cinnamon Quails
  • 1/2 teaspoon of fresh Ginger, grated, or ground
  1. Heat all the spices in a small pan on a low heat until fragrant
  2. Tip into a pestle and mortar and bash until fine

RAW Cheesecake:

For the base:

  • 100g mixed Nuts
  • 1 teaspoon of Himalayan Pink Salt
  • 100g Dates
  1. Line the base and sides of a cake tin with baking parchment
  2. Blitz all the ingredients in a blender until uniform in size (not smooth though, you want that biscuit texture).
  3. Press down firmly into the bottom of your tin and refrigerate

Filling:

  • 2 Ripe Avocados
  • 75g Coconut Oil
  • 2 teaspoons of Chai Spice
  • zest of 1 Orange
  • 80g Raw Cacao Powder
  • 1/2 teaspoon of Himalayan Pink Salt
  • 150g Agave Syrup
  1. Blitz everything in a blender until very smooth and silky
  2. Spoon onto your base, sprinkle with a little cacao powder and a few crumbled walnuts
  3. Cover and refrigerate for at least 3 hours
