Never again could i ever desire cheese (not that i did much to be honest). This little treat could work so well, in so many substitutions. Aye, it doesn’t melt but by heck it tastes PHENOMENAL! This is no over- statement people. Get this into your life, belly, face. Now!
Our beautiful friend Mr Cashew boasts so many health benefits. If you can just get your wonderful heads around that idea, maybe even just once a week subbing this fabulous guy in place of your animal cheese. And it’s so bloody good for you! (yes, i’m this excited because really, it is that good. All round good- if this cheese were personified it would be the Waltons- wholesome, beautiful and sickenly good for the soul).
Cashews contains heaps of great minerals, especially manganese, potassium, copper, iron, magnesium, zinc and selenium. Not only that but they have essential vitamins such as pantothenic acid (vitamin B5), pyridoxine (vitamin B-6), riboflavin, and thiamin (vitamin B-1). (Makes 1 heaped pot, Vegan, Gluten free, RAW)
- 1 cup raw Cashews
- 2 tbsp Nutritional Yeast
- juice of 1/2 Lemon
- 1/8- 1/4 cup Water
- 1 tsp Mustard Seeds
- 1 tsp whole Black Peppercorns
- Rinse the cashews and soak overnight in plenty of cold water, drain
